Butterfly pea flower, known for its vibrant blue hue, is a versatile ingredient used in a wide array of products ranging from herbal teas to mixed drinks and cosmetics. Recipe for Butterfly Pea Lemonade


[Ingredients]

8-10 dried butterfly pea blossoms

1/3–1/2 cup honey (adjust to taste)

1 cup freshly squeezed lemon juice (adjust to taste, and keep the rind if using organic lemons for lemon pepper spice)

5 cups filtered water (or 1 cup filtered water and 4 cups sparkling water)

ice cubes (optional) additional lemon slices and/or butterfly pea flowers for garnish


[Instructions]

In a saucepan, combine 3 cups of filtered water and sugar. Add butterfly pea blossoms towards the end. Simmer, remove from heat, cover, and steep for 10 minutes. Remove any sediments, strain through a fine mesh sieve, and let it cool.

Combine lemon juice with the remaining 2 cups of water in a jar or glass measuring cup.

Half-fill glasses with ice before serving. Pour chilled butterfly pea syrup halfway into the glass.

Top with the lemon mixture and witness the color transformation from blue to pink as the lemon mixes with the syrup. Stir until the color is uniformly pink, then serve.
